Infrared gives natural gas warewashing new flair

With his second location opening to standing room-only crowds in June of 2004, Redstone's signature approach is to take traditional, recognizable favorites and recreate them in a bold new way.

Restaurant management applied the same principle in selecting a Stero natural gas dishwasher and booster water heater. The advanced infrared technology brings a new twist that helps the popular restaurant keep pace with high volumes.

Rapid response. "We serve about 1,200 people for dinner on a Friday night," they explained. "We drain and change our water every two hours. With the infrared, recovery time is extremely fast - we never have to worry about running out of hot water and dishes stacking up."

Consistent performance. Management also counts on the equipment's efficiency and performance. "Our dish machine is running day and night and takes a lot of abuse. The Stero equipment has provided virtually trouble-free operation from the start." Simple operation and easy cleaning are other winning features.

Partnership and expertise. Mike Daly, The Daly Group, Inc., sold Redstone's management on the economics of using natural gas versus electric. "We care about creating great foods, but we're also businessmen,"  they emphasized. "We base things on solid relationships and trust. When Mike says we can save up to $7,000 a year in operating costs, we can believe him."
