Natural gas steam kettle produces appetizing results

Natural gas steam kettleTasty Italian cuisine has made Figlio a mainstay in the Uptown Area of Minneapolis for more than 16 years. To prepare their signature sauces, pastas and other quality fare, they recently installed a new 40-gallon Market Forge natural gas steam kettle and a 12 gallon tilt kettle.

"Market Forge's superior design and overall efficiency make it a vital piece of equipment in our restaurant," said Rex Reitmeyer, executive chef.

Fast cooking, quick recovery. "We can produce more batches per day," he comments. "It's also compact and easy to operate for maximum cooking capacity in minimum space."

Durable and easy to maintain. Figlio gives their equipment a real workout 18 hours a day, seven days a week. "We serve 1,000 meals  daily on average," says Mike Herstine, general manager. "We call it the Figlio '10-X factor-with our high volume, we're ten times tougher on our equipment than most restaurants." The kettle's boiler is nickel-plated inside and out for durability; controls and ignition are placed higher to reduce moisture deterioration.

The low-cost efficiency of natural gas and a high efficiency equipment rebate from CenterPoint Energy were other benefits.
